Foodie Obsession – Asparagus

My current obsession is asparagus. I simple cannot get enough of it. Cooked anyway, served anyway, it’s all good with me. It’s so good. I can’t believe that it’s taken me so long to discover it and cook it myself.

This spear like veggie is chock full of great health benefits, so with each meal I’m serving up a side dish of health. Now that’s always a great benefit with any meal.

With every bite there are more benefits to asparagus, my short list just highlights a few. Asparagus is a great vegetable to serve year round but it’s extra-special in the spring because it’s one of the signals of this great season. While in the colder months I tend to roast asparagus, as the weather warms I look for other ways to cook it and serve it. I’ll be sharing two recipes, one is a quick, easy dish to make and the other is a great brunch idea.
